Egg Puff-O Recipe Released again

Back in 2013 I released for limited use, my exclusive recipe for the wonderful Egg-Puff-O.  After that period expired, no one was permitted to use that recipe. Now for a limited time only- Now thru May 12th, I am allowing Chatlist Readers to make it at home.

FROM GRITS TO GOURMET- A SOUTHERN BOY COOKS  . . .

Egg Puff-O!

In a skillet, melt shortening  – (I use an 8″ seasoned iron skillet) 
Hand shred about 2 table spoons of onion, raw squash (or anything you like)
Cook until browning.

In a container crack and beat one egg (I never break an egg directly
into frying pan- I learned not all are perfect)
Into the egg, mix well one heaping teaspoon of SELF RISING  meal. Pour into pan.

Cook over gentle heat, flip when needed, to cook other side. Usually this produces a fluffy big Egg Puff-O! large enough for two people or one that is very hungry. it is light, airy and does not taste of corn meal.  The list of things that can be added are endless, but the more you add, the heavier it gets- and by that time, you might want to serve it for supper.
