Subject: Fried Cryptic Zucchini Squash
Shopping for Zucchini squash won’t always be as exciting as my recent experience, but be assured that they are always good eating, no matter how prepared. And, I am willing to bet that all grocery stores in Chatham county sell them. The wonderful thing is, they are nearly always fresh tasting.
Years ago, I had a fantastic Zucchini Squash recipe for pickles. Sensational- But in recent years, I haven’t made them due to the fact they must be treated as canned goods- boiled and sealed in jars. I can’t take the heat, so I got out of the canning kitchen.
But- here is my recipe for Fried Cryptic Zucchini Squash:
In a seasoned iron skillet, melt enough shortening to cover bottom. Cut up zucchini in bite size pcs. Cut up about half cup of onions. Add both to hot skillet- stir to keep from burning. Sprinkle well with Yellow Corn Grits (Chatham Marketplace)- Add garlic powder to taste. Stir and cook until crisp and browned.
Serve over plain rice- top with lite soy sauce and parmesan cheese. A piece of fried Catfish and Fruit salad adds to the sensation. So does (fresh) cranberry sauce.
